PANCAKE DAY

Don’t forget it is Pancake Day on Tuesday 4th March! If you are anything like us here at Ruby+Ed HQ, we like to add chocolate to anything we can. So here is what we are making this year.
Chocolate chip pancakes (Serves 12)

Ingredients 1 1/4 cups flour
2 eggs
1 cup milk
1 tablespoon sugar
1/4 teaspoon cinnamon
1 tablespoon baking powder

1/4 teaspoon salt
4 tablespoons melted butter
3/4 teaspoon vanilla
1 cup chocolate chips

Directions:
1. In a small saucepan combine both the butter and milk, place on a low heat until butter has melted. Leave to cool a little and then combine the flour, sugar, baking power and salt. Mix well.
2. In a large bowl, whisk the eggs together and then add the milk mixture. Add the dry ingredients and mix just until barely blended, then add the chocolate chips and mix them in well.
3. Preheat the frying pan and add 1 teaspoon of butter and melt until bubble. To cook the pancakes use around 3 tablespoons of batter in the frying pan, leave to cook until bubbly on top and golden brown on the bottom, flip the pancake and do again on the same side.
4. Repeat till all the batter is used and serve hot!

We hope you love the recipe as much as we do!
Bon appétit
